The secret to properly smoking your American BBQ food is to practice good tempature control. Low & slow is a good rule of thumb when cooking American BBQ food. The ideal tempature when smoking American BBQ is around 200-220 degree F. This gives the smoke enough time to sink into the meat and naturally tenderize the meat. Smoking gives the natural connective fibers in the meat time to break down and become tender.
